Mashed Potatoes: A Family Favorite

Mashed potatoes are my kids’ favorite meal. They ask for it almost every day. Although I’d prefer they eat more vegetables, their stubbornness with food choices means I end up making mashed potatoes a few times a week. My husband and I love them too, so we often brainstorm ways to make them more delicious.

Discovering a New Twist

One day, while scrolling through Instagram and TikTok, I stumbled across a tip from a TikToker named Jourdyn (@jeauxp). I thought, “What more can you do to mashed potatoes?” Apparently, a lot more. Jourdyn’s secret ingredient is chicken stock (or broth). I had never thought of that! My usual recipe was basic: boil the potatoes in water and salt, then mash them with butter and milk. But Jourdyn’s method introduced me to a new world of flavors.

The New Method

Jourdyn starts by not peeling the potatoes, keeping the skins on for added texture and nutrients. After thoroughly washing them, she rubs avocado oil on the skins, cuts them in halves, and places them in a pot. Instead of just water, she uses a mix of chicken stock and water, adds a pinch of salt, and lets them boil.

Trying It Out

Curious, I decided to try Jourdyn’s method one evening. I rubbed avocado oil on the skins, used chicken broth (since I didn’t have stock), and followed her steps. After boiling, I drained the potatoes, reserving some of the cooking liquid for mashing. Then, I mashed the potatoes, skins and all, with a bit of butter, a splash of the reserved broth, and a generous helping of black pepper.

The Result

The flavors were incredible! The broth added a subtle umami that water couldn’t match, and the skins provided a delightful, rustic texture. My kids, usually picky about the creamy texture, were intrigued by the slightly chunky feel. My husband, a die-hard fan of traditional mashed potatoes, asked, “What did you do differently? These are amazing!” The new recipe was a roaring success.

Experimenting Further

Encouraged, I started experimenting more. Inspired by another TikTok user, @potatolover97, I added sour cream and chopped chives to the next batch for extra tang and color. The sour cream’s tang paired wonderfully with the potatoes’ richness, turning a humble side dish into the meal’s star.

Endless Possibilities

Through my TikTok-inspired journey, I’ve learned that mashed potatoes can be a canvas for culinary creativity. From mixing in roasted garlic and parmesan to adding a splash of truffle oil for special occasions, the possibilities are endless. I’ve also tried other TikTok hacks, like adding nutmeg to spinach for an unexpected flavor lift or using a slice of bread to soften brown sugar quickly.
