Ingredients
- 1/2 lb Italian sausage
- 1/2 lb lean ground beef
- 1 small onion, finely chopped
- 1 green pepper, finely chopped
- 1 red pepper, finely chopped
- 3 cloves garlic, chopped
- 4 cups low sodium beef broth
- 2 cups low sodium chicken or vegetable broth
- 1 can (14.5 oz) salsa tomatoes
- 3/4 cup raw rice (I use jasmine)
- Kosher salt and fresh ground black pepper

How to Make Stuffed Pepper Soup
- Brown the Meat: In a pot over medium heat, brown the Italian sausage and ground beef, breaking it apart as you go.
- Add Veggies: Midway through browning, add the onions and peppers, stirring several times. Reduce heat to medium-low, add garlic during the last minute, and stir constantly. Drain excess fat.
- Simmer the Broth: Add beef broth, chicken broth, and tomatoes. Simmer for 15 minutes or until the peppers soften.
- Cook the Rice: Add the rice and coat well. Cover and cook for 5-7 minutes or until the rice is tender.
- Season and Serve: Season with kosher salt and freshly ground black pepper to taste. Serve quickly for best results.
