- 1 lb (450g) ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3-4 large potatoes, peeled and sliced thinly
- 1 red bell pepper, diced (optional)
- 2 cups (200g) shredded cheddar cheese (divided)
- 1 cup (240ml) beef broth
- 1 cup (240ml) heavy cream
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat the oven to 375°F (190°C) and grease a large baking dish.
- Prepare the beef mixture:
- Heat olive oil in a skillet over medium heat.
- Add the diced onions and cook for 3-4 minutes until soft.
- Add garlic and red bell pepper (if using), cooking for another 1-2 minutes.
- Add the ground beef, breaking it apart with a spoon as it cooks. Season with smoked paprika, oregano, salt, and pepper.
- Cook the beef until browned and cooked through. Set aside.
- Prepare the potatoes:
- Thinly slice the peeled potatoes (about ⅛ inch thick).
- Arrange half of the potato slices in an even layer at the bottom of the greased baking dish.
- Make the cream mixture:
- In a small saucepan, melt the butter over low heat.
- Stir in the beef broth and heavy cream. Heat gently until combined, but do not boil. Season lightly with salt and pepper.
- Assemble the casserole:
- On top of the first layer of potatoes, spread half of the cooked beef mixture.
- Pour half of the cream mixture over the beef and potatoes.
- Sprinkle 1 cup of shredded cheddar cheese over the layer.
- Add another layer of sliced potatoes, then the remaining beef mixture.
- Pour the remaining cream mixture evenly over the top.
- Sprinkle the remaining 1 cup of shredded cheddar cheese over the entire dish.
- Bake:
- Cover the dish with foil and bake in the preheated oven for 40 minutes.
- After 40 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden brown and bubbly, and the potatoes are tender.
- Serve:
- Let the casserole cool for a few minutes, then garnish with fresh parsley.
