Cheesy Beef and Potato Casserole

Ingredients:

  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3-4 large potatoes, peeled and sliced thinly
  • 1 red bell pepper, diced (optional)
  • 2 cups (200g) shredded cheddar cheese (divided)
  • 1 cup (240ml) beef broth
  • 1 cup (240ml) heavy cream
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. Prepare the beef mixture:
    • Heat olive oil in a skillet over medium heat.
    • Add the diced onions and cook for 3-4 minutes until soft.
    • Add garlic and red bell pepper (if using), cooking for another 1-2 minutes.
    • Add the ground beef, breaking it apart with a spoon as it cooks. Season with smoked paprika, oregano, salt, and pepper.
    • Cook the beef until browned and cooked through. Set aside.
  3. Prepare the potatoes:
    • Thinly slice the peeled potatoes (about ⅛ inch thick).
    • Arrange half of the potato slices in an even layer at the bottom of the greased baking dish.
  4. Make the cream mixture:
    • In a small saucepan, melt the butter over low heat.
    • Stir in the beef broth and heavy cream. Heat gently until combined, but do not boil. Season lightly with salt and pepper.
  5. Assemble the casserole:
    • On top of the first layer of potatoes, spread half of the cooked beef mixture.
    • Pour half of the cream mixture over the beef and potatoes.
    • Sprinkle 1 cup of shredded cheddar cheese over the layer.
    • Add another layer of sliced potatoes, then the remaining beef mixture.
    • Pour the remaining cream mixture evenly over the top.
    • Sprinkle the remaining 1 cup of shredded cheddar cheese over the entire dish.
  6. Bake:
    • Cover the dish with foil and bake in the preheated oven for 40 minutes.
    • After 40 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden brown and bubbly, and the potatoes are tender.
  7. Serve:
    • Let the casserole cool for a few minutes, then garnish with fresh parsley.
    • Serve warm and enjoy!

This cheesy, hearty casserole would be perfect for a family dinner or a cozy meal. You can also add variations like bacon bits, green onions, or swap out the cheese type for a different flavor profile.
