As a child, I fondly remember enjoying pineapple upside-down cake at my grandmother’s house. This vintage dessert has stood the test of time, remaining popular today for its moist, sweet, and fruity flavors.

Simple Yet Delicious Recipe

Although it may appear complex, making pineapple upside-down cake is surprisingly straightforward. If you have pineapple enthusiasts in your family, they’ll likely request this cake weekly!

Ingredients

  • 1/4 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1 can (20 oz) pineapple slices in juice, drained (reserve juice)
  • 1 jar (6 oz) maraschino cherries without stems, drained
  • 1 box Betty Crocker Super Moist yellow cake mix
  • Vegetable oil and eggs as required by cake mix box

Directions

  1. Preparation: Preheat oven to 350°F. Melt butter in a 13×9 inch pan in the oven. Evenly sprinkle brown sugar over melted butter.
  2. Arranging Fruits: Press pineapple slices gently onto the brown sugar. Place a cherry in the center of each pineapple slice and arrange the remaining cherries around the slices.
  3. Mixing the Batter: Combine enough water with the reserved pineapple juice to measure 1 cup. Prepare cake batter as instructed on the box, substituting the pineapple juice mixture for water. Pour the batter evenly over the pineapple and cherries.
  4. Baking: Bake for 42 to 48 minutes, or until a toothpick inserted into the center comes out clean. Immediately run a knife around the sides of the pan to loosen the cake. Invert a heatproof serving plate upside down onto the pan, then carefully turn the plate and pan over. Allow the pan to rest over the cake for 5 minutes to let the brown sugar topping drizzle over the cake.
  5. Cooling and Enjoying: Let the cake cool slightly, then serve and enjoy the nostalgic flavors of pineapple upside-down cake!
